Pie Heaven

Yes, this is yet another pie recipe. This one is incredibly easy and my all-time favorite. This is Sausage Von Trapp's grandmother's recipe for Chess Pie. This is a freaky recipe, I mean it has vinegar and corn meal in it, how weird is that?! But something happens in the oven and it comes out golden brown with a thin crust that gives way to a wonderful sweet filling that I can only describe as heaven. And it's easy, it takes about 3 minutes to put together and an hour to bake and that's it.

Chess Pie

1 1/2 cups sugar
1 stick butter
3 eggs
1 tablespoon corn meal
1 tablespoon vinegar
1 teaspoon vanilla
3 tablespoons milk

Mix sugar, butter, milk and vinegar. Add eggs, one at a time, mixing after each egg. Add vanilla and corn meal. Mix well and pour into uncooked pie shell. Cook at 350 for 1 hour, until the top is golden brown.

Serves 1, if it's me.

Eating this warm with a cup of coffee is bliss.

it does sound very odd. but easy. too bad it only serves one. :)

I'm a 1, I guess I could double it so the wife could have one too. I'm so curious about Chess pie, I'm going to make one. I remember we talked about it once before, and I thought it was a typo. I thought it was Cheese pie, which is just weird and could probably cause some serious intestinal obstructions.

It serves 1 Mr. Macabre or 8 or 10 normal servings. It's kind of like pecan pie without the pecans.

Might want to put a ring of tin foil around the edge of the pie crust to keep it from overbrowning, taking it off after about 30 minutes.

I just had a slice for breakfast, and I'm feeling guilty because I want to go have another piece. The crust that forms on the top is magically delicious! This is a super easy and delicious pie, and is now Captain approved!
